Golden Beets





I'm addicted to golden beets. They are delicious, I just boil them in a little water, peel them and eat them as is. They are so tender, sweet and earthy tasting I just love them. Today at the farmers market the grower had a good selection, and I carried an arm load home. I was curious about these cute little eggplant that were about the size of croquet balls, but I didn't know what to do with them. I also tasted an Afghanistan cucumber that was good but was about 2 feet long and much more vegetable than I needed. I'll spend the rest of the day psyching my self up to return to work tomorrow and painting. I'm anxious to practice the new things I learned yesterday.

  2. I love your weekend trips to the farmers market cause you come back with the BEST photos of the most beautiful bounty!

    We stopped on the way home from the beach last weekend at a farm stand and got 2 huge cucumbers (about as big as the one you describe) cause my daughter loves cucumber. Of course I ended up eating most of it myself so they did not go to waste having my fill of cucumber for lunch and dinner all week long - LOL!

  3. I'm not such a beet fan, but those eggplants look absolutely yummy. Usually, that kind is much more delicious than the long dark ones.

  6. I love, love, love beets of every color. I love them boiled, roasted, dried, and as juice. Your golden ones look delicious!!! As does the eggplant. Enjoy!! Silke
